Olive Oil Chocolate Mousse

George Calombaris from Masterchef Australia rustles up this quick and easy delicious chocolate mousse recipe that the Brummer family absolutely LOVES.

Yields: 4 Servings

Preparation Time: 15 minutes

Ingredients:

100ML EXTRA VIRGIN OLIVE OIL 200G DARK CHOCOLATE (70% LINDT)
1 cup (250ml) thick cream 1 – 2 drops Lemon juice
1 cup pistachio kernels, touched & roughly chopped (optional)

 

Method:

Place chocolate in a heatproof bowl over a pan of simmering water (don’t let the bowl touch the water) and stir until melted. Stir in the olive oil, then remove from heat and cool for 5 minutes.

Meanwhile, in a chilled bowl whip cream to soft peaks. Gently fold the whipped cream into chocolate mixture until combined. Divide the mousse among 4 serving bowls and chill in the refrigerator. Top with pistachio kernels if desired.
